National Eating Disorder Awareness Week

What is NEDAwareness Week?

NEDAwareness Week is a collective effort of primary volunteers, including eating disorder professionals, health care providers, students, educators, social workers, and individuals committed to raising awareness of the dangers surrounding eating disorders and the need for early intervention and treatment.

Microwaved Scrambled Eggs


By now, you may be aware that I love breakfast foods!  Eggs are one of my favorite foods, and I don't think you can ever go wrong eating them, for any meal of the day!  I have recently been into scrambled egg sandwiches, and love them with cheddar cheese and avocado!  Also, if you are in need of a healthy, quick snack or meal, you can make microwave scrambled eggs with cottage cheese!  The cottage cheese adds some lean protein, and makes the eggs fluffier.

Microwave Scrambled Eggs
1 egg
1 oz cottage cheese
any additional "toppings"

Simply grease your microwave safe bowl, cup, etc, and mix the two ingredients together.  Microwave for one minute, and then in 30 second increments until they have cooked through!  Enjoy!

Fat: 6 g
Sat. Fat: 2 g
Protein: 9 g

Peanut Butter Cup Popcorn


While I am not a huge popcorn fan, this stuff is definitely really yummy, and an easy way to add a little pizzazz to popcorn!  Also, the amount of ingredients you use is completely up to you; I did no measuring whatsoever while preparing this.

I'm Back! and Putting Things into Perspective

Hello again! I am sorry I have been away this week! I was not able to post this week due to some computer issues, which initially was a little frustrating, but once again it made me realize how much I take for granted. It is foolish for me to get upset that my computer might not work, when I am so lucky that I even have access to a computer, that I can read and write, that I have the freedom and time to develop my passions, and that I can live a comfortable, happy life.

I love this image, and use it as a constant reminder of how privileged I am, especially if I am upset about something.  It really helps put my "problems" into perspective, and once again reminds me that I don't really have any true problems at all, and I should channel my energy to help others.
