Pumpkin, Flax, and Walnut Granola

Granola is a perfect snack that goes well with so many foods, and is even wonderful by itself!  While store bought granola can be very delicious, sometimes it is overly processed and packed with fat and sugar.  Making homemade granola is very easy, and you can control exactly what you put into it!  This recipe is very healthy since nearly every ingredient has a health benefit of some sort!  And it is so YUMMY!!!


Pumpkin, Flax, and Walnut Granola
4 cups rolled oats
1/2 cup ground flaxseed
1/4 cup walnuts
1 teaspoon pumpkin pie spice
1 teaspoon cinnamon
1/2 cup brown sugar
1/2 cup pumpkin puree
1/2 cup applesauce
1/4 cup maple syrup
1 teaspoon vanilla extract
and anything else you would like to add!

Preheat the oven to 325 degrees F.  Combine brown sugar, pumpkin, applesauce, maple syrup and vanilla and mix until smooth.  Stir in the dry ingredients until everything is evenly coated and moist.  Spread the mixture evenly on a cookie sheet and bake for 40 minutes, rotating halfway through.  Enjoy your granola with yogurt, milk, or even by itself!
