Pumpkin Cupcakes with Cinnamon Cream Cheese Frosting
I can't believe the month of October is nearly over! That being said, I knew I needed to post a pumpkin recipe, and these pumpkin cupcakes are delicious! These cupcakes have very little fat due to the pumpkin and applesauce, and you can't tell that whole wheat flour was used!
Makes about 24 cupcakes
3 cups whole wheat flour
1.5 cups sugar
1 teaspoon baking soda
1 tablespoon pumpkin pie spice
1 teaspoon cinnamon
4 eggs
1 can pumpkin puree
4 oz applesauce
1/4 cup canola oil
Frosting:
8 oz cream cheese
1.5 cups powdered sugar
1 tablespoon cinnamon
Preheat the over to 350 degrees F. Mix the whole wheat flour, baking soda, pumpkin pie spice, and cinnamon together in a bowl and set aside. In another bowl, mix eggs, pumpkin, sugar, applesauce, and oil together. Gradually add the dry ingredients to the wet ingredients, and do not over mix! Pour into a muffin/cupcake pan and bake for about 20-25 minutes, or until a toothpick or knife comes out clean.
While the cupcakes are baking, mix the cream cheese with the powdered sugar and cinnamon until it is smooth. You can vary the amount of sugar based upon your personal preferences.
Allow cupcakes to cool a bit before frosting, then frost and enjoy!
